My cuisine stems from my family heritage and a deep connection to my Mexican roots. I learned to cook by watching my grandmother Otilia, who was a traditional cook and midwife in Morelos, Mexico.
For more than 10 years, I led my own gastronomic project in Brussels: El Taco Mobil, a food truck specializing in authentic Mexican cuisine. There, I cooked for hundreds of events, bringing homemade and traditional flavors to European audiences with a fresh, accessible, and respectful approach to ingredients.
My culinary style is based on respect for ancestral processes, such as the nixtamalization of corn, and on creating experiences that combine authenticity, technique, and warmth. I am interested in rescuing popular flavors and knowledge, reinterpreting them from a contemporary perspective, and making the kitchen a space for encounter, memory, and community.
